Spicy Crispy Chicken

This recipe is on my list of things to make so I wanted to share it with my readers as well.

Spicy Crispy Chicken

2 c. buttermilk
1 T. Tobasco sauce
Boneless Chicken Breasts cut into strips or large chunks
2 c. crushed spicy tortilla chips, like Doritos
1 tsp. ground chipotle chile powder

Heat oven to 350F. In resealable plastic bag, combine first 2 ingredients; add chicken. (I mixed the sauce in bowl, then poured that over a baking dish the chicken were in. Why waste a Zip-loc?) Chill 2 hours, turning once.

In bowl, combine remaining ingredients. Coat chicken in chip-chipotle mixture.

Place chicken on baking sheet. Bake 1 hour and 15 minutes., or until thermometer inserted into meat, not touching bone, reads 170F.
